Appliances: Electric or handheld sandwich toaster.
Ingredients for the Chicken stuffing:
- Boiled shredded chicken – 2½ cups
- Onions – 2, sliced
- Tomatoes – 4 large, chopped
- Garlic – 1 knob, crushed coarse with mortar pestle, you don’t want a paste.
- Kashmiri chilli powder – 2 tsp or less depending on how spicy you want it.
- Turmeric powder – ¼ tsp
- Hot and sweet tomato ketchup or any equivalent – 2 tablespoons
- Oil – 2 tablespoons
- Sliced Bread – 16 slices, buttered
- Melted Butter – 2 tablespoons to brush on top
Method:
- On low heat, add 2 tablespoons of oil to a hot kadhai/wok.
- Toss in the crushed garlic fry until fragrant. To this, add the onions and continue frying until they turn a light brown.
- Next add the tomatoes, cook until slightly squishy.
- Add the chilli and turmeric powders followed by the shredded chicken, salt and toss so that the whole mix is well combined. Cook until almost dry.
- The stuffing should moist but not wet, or your sandwiches will be soggy.
- Make sandwiches with buttered, sliced bread and stuffing.
- Grill the prepared sandwiches in an electric or hand held sandwich toaster like the ones shown below.
