TUNA SANDWICH

Tuna with crunchy veggies and a creamy hummus based sauce, stuffed in Goan poi.

Serves:4

Ingredients:

  • Canned Tuna in water – 1 tin of 180 grams
  • Tender Celery stalk – 1, chopped (optional)
  • Capsicum – 1, chopped small
  • Tomato – 1, chopped small
  • Cucumber – 2, chopped small
  • Onion – 1, thinly chopped small
  • Lettuce leaves, Iceberg or any other kind that you prefer
  • For the Creamy Hummus Sauce:
    • Hummus – 7 tablespoons
    • Softened Cheese – 3 tablespoons
    • Chilli flakes – ½ teaspoon
    • Honey – 1 teaspoon
    • Mustard – ¼ teaspoon
  • Goan Poi bread or Pita bread – 4

Method:

  • To a bowl add the drained and flaked tuna and set aside,
  • In a separate bowl whisk together hummus, garlic flake, chilli flakes, honey and mustard to a smooth sauce.
  • Add 4 – 5 tablespoons of the prepared sauce to the flaked tuna. Fold in the chopped celery, capsicum, tomato, cucumber and onions. Mix well and set aside.
  • Slit the poi, spread a tablespoon of Creamy Hummus sauce on the inside of the slit poi.
  • Assemble the sandwich just before serving.
  • Stuff each poi with a couple of lettuce leaves and the tuna in creamy sauce.
  • Serve immediately with extra sauce on the side.
