Serves: 4
Ingredients:
- Palak/ spinach leaves – 3 cups full roughly chopped
- Potato – ½ cup chopped small (chop small purely to hasten the cooking process)
- Garlic – 4 cloves chopped/ crushed/sliced/whole
- Onion – 1 teaspoon finely chopped
- Pepper corns – 1 teaspoon
- Dried Thyme – ¼ teaspoon crushed
- Fresh Basil/ dried Basil – 1 teaspoon / ½ teaspoon crushed
- Maggie chicken/ vegetarian cube – 1
- Water – 2 cups
- Oil – ½ teaspoon
- Butter – 2 teaspoons
- Milk / cream – 5 tablespoons
Method:
- Heat a large saucepan, add oil and butter.
- Add the potato, garlic, onion, pepper and Maggie cube. Cook for 2-3 minutes, add water, chopped palak and bring to the boil until the potato is done.
- Take the pan off the heat.
- Cool it to room temperature and puree the soup with a hand blender.
- Warm the soup before serving, add milk/ cream.
