SHEERA

Serves : 4-5

Ingredients:

  • Semolina – 1/2 cup
  • Ghee – 4 tablespoons
  • Raisins -1 tablespoon
  • Broken nuts – 1 tablespoon
  • Cardamom powder -1 teaspoon
  • Boiling water – 1 1/2 cup with a pinch of salt
  • Sugar – 5 tablespoons (this is mildly sweet, increase if required)
  • Salt to taste

Method:

  • To a hot kadhai/ wok on low heat add a teaspoon of ghee, roast the nuts and raisins adding the nuts first and raisins a minute or two later. Allow the nuts to turn a light brown. Remove nuts and raisins into a bowl and set aside.
  • To the same the kadhai on low heat. Add the rest of the ghee followed by the semolina and roast the semolina until fragrant but not brown. Make sure you stir all along so as not to burn the semolina.
  • Add the nuts and raisins to the roasted semolina and then pour in the boiling hot water stirring all the while. Careful of splutters.
  • Once the semolina has absorbed all the water (the semolina will be moist but not wet), add in the sugar and mix well for 3-5 minutes. Sprinkle on the cardamom powder, mix well and take the kadhai off the heat.
  • Spread the sheera into a flat serving dish as shown below or serve about a third of a cup as individual portions.
