Makes: 6 waffles in the waffle-maker in the image below
Ingredients:
- Plain Flour – 2 cups
- Baking Powder – 1½ tablespoon
- Sugar – 2 tablespoons
- Milk – 1½ cups
- Melted butter – ½ cup
- Eggs – 2
- Vanilla – 1-2 teaspoons
- Salt – ½ teaspoon
Method:
- In a bowl large enough to hold all the batter, mix the flour, baking powder and sugar, and set aside.
- In a separate bowl, whisk together the milk, melted butter, eggs and vanilla.
- Pour the wet ingredients into the dry ingredients (flour mix) and fold together until they’ve just combined. Don’t overwork the batter.
- Cover and rest the batter for 6 minutes.
- Using a ½ cup measure, pour the batter into the waffle-maker. Cover and cook on low heat until both sides are done and golden-brown in colour.
- Serve warm, with a scoop of ice cream or fresh whipped cream and chocolate sauce.
Notes:
- I use ½ cup full of batter for each waffle in a stovetop waffle-maker which is 5½” across.
- Suggested toppings: Scoops of fresh whipped cream or ice cream, any fruit compôte, chopped fresh fruit like strawberries, blueberries, banana (which goes really well with caramel sauce), raisins.
