WAFFLES

Makes: 6 waffles in the waffle-maker in the image below

Ingredients:

  • Plain Flour – 2 cups
  • Baking Powder – 1½ tablespoon
  • Sugar – 2 tablespoons
  • Milk – 1½ cups
  • Melted butter – ½ cup
  • Eggs – 2
  • Vanilla – 1-2 teaspoons
  • Salt – ½ teaspoon

Method:

  • In a bowl large enough to hold all the batter, mix the flour, baking powder and sugar, and set aside.
  • In a separate bowl, whisk together the milk, melted butter, eggs and vanilla.
  • Pour the wet ingredients into the dry ingredients (flour mix) and fold together until they’ve just combined. Don’t overwork the batter.
  • Cover and rest the batter for 6 minutes.
  • Using a ½ cup measure, pour the batter into the waffle-maker. Cover and cook on low heat until both sides are done and golden-brown in colour.
  • Serve warm, with a scoop of ice cream or fresh whipped cream and chocolate sauce.

Notes:

  • I use ½ cup full of batter for each waffle in a stovetop waffle-maker which is 5½” across.
  • Suggested toppings: Scoops of fresh whipped cream or ice cream, any fruit compôte, chopped fresh fruit like strawberries, blueberries, banana (which goes really well with caramel sauce), raisins.
